Post-doc in plant-protein extrusion
We need to eat more plant-protein and less meat due to sustainability and health reasons. Wet extrusion is a way to produce fibrous, meat-like structures from plant-protein. It is known how to produce the fibres, but not exactly why they form, and we are therefore looking for you who want to help us find this out in a post-doc position at Research Institutes of Sweden and Chalmers University of Technology.
